Split Pea Soup

Ingredients
- Bacon – 140 gms.
- Onion – 1 No.
- Garlic cloves – 4 nos.
- Carrots – 170 gms.
- Green Split Peas – 425 gms.
- Water – 470 ml.
- Chicken Stock – 950 ml.
- Spring Onion and Fresh herbs
Directions
- Cut the bacon and carrots into pieces. Chop the onion and garlic.
- Sear the bacon in a pot until crispy before adding the onion and garlic. Add the carrots to the pot when onions are soft.
- Add the peas and cover with the chicken stock and water.
- Bring to a boil and then simmer for 25 minutes.
- Season with salt and pepper. Garnish with spring onion and fresh herbs before serving.
