About Daniel Humm
While growing up in Switzerland, chef Humm developed love for fresh, local ingredients in early age. He has vivid childhood memories of going to the farms with his mother to buy produce and watch her cook whatever was in season. Today, Humm’s biggest inspirations are New York’s cultural history and agricultural bounty, which can be seen in the smallest details at his restaurant. For instance the sea salt used in his restaurant comes from a small salt pan in Long Island instead of Guérande in France.
In 2006, when Will Guidara (co-owner, business partner) and Humm started out, they wanted to reimagine fine dining. They didn’t want Eleven Madison Park to be a stuffy place with the pretensions that come with their perception of fine dining. They wanted to create a place that made guests feel at home. While Eleven Madison Park does that with its subdued hospitality, the duo took it a step further by opening Made Nice. Humm’s third restaurant with Guidara (after their one-Michelin-star restaurant NoMad), Made Nice serves fast-casual versions of the food available at his Michelin-starred restaurants.
