Shredded Chicken coleslaw served on the of toasted garlic bread
400 gms. Chicken breast
50 gms. Gherkins, chopped
2 pinch fresh thyme
30 ml olive oil
2 tbsp. rich mayonnaise
1 no. lemon juice
1 tbsp. Dijon mustard
Zest of 1 lemon
2 tsp. finely chopped garlic
Salt & black pepper to taste
1 foot long garlic bread loaf sliced into ½ inch
Butter to spread on garlic bread
- In a sauce pan boil chicken breast in salted water. Meanwhile spread butter on both sides of garlic bread and toast them in oven until golden brown.
- Once chicken is boiled shred it in a mixing bowl. Add gherkins, thyme, olive oil, mayonnaise, lemon juice, mustard, zest, garlic and mix them well with chicken. Add salt & pepper to taste.
- Now put chicken mixture on garlic bread slices (1 tbsp. for each slice) and spread it evenly on each slice. Serve them on a nice platter with the garnish of thyme spring or parsley.
